Chocolate Mojito Waffles

I should probably lead up to this one, but I’m a firm believer in start as you mean to carry on! Dirty chocolate mojito waffles! I call this recipe the get out of jail free card. If ever someone is upset, or if you need to make up with someone this recipe is your passport straight into the good books – a holy trinity of all things delicious, naughty and comforting. Waffles… because who doesn’t like waffles, paired with chocolate, fresh herbs and just a splash of rum = WINNER

This recipe will fit in perfectly as a treat brekkie, a sumptuous dessert… or just because you feel like! You can also easily swap out the rum in the recipe for rum essence, which will pack the same flavour without the alcohol content.

So get your waffle maker out and let’s get creative!

Things you’ll need

  • 3 large eggs, separated
  • 1 cup brown sugar, packed
  • ½ tbp spoon baking powder cup olive oil
  • 1 tsp vanilla essence
  • 2 cups greek yoghurt
  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ tbp spoon baking powder
  • 1 teaspoon kosher salt
  • 150g dark chocolate
  • 1 bunch fresh mint picked and thinly chopped – save some whole leaves for garnish
  • ½ cup dark rum or 2tps vanilla essence
  • Waffles maker
  • oil spray
  • Chocolate ganache
  • ½ cup thick cream
  • 60g dark chocolate finely chopped.

Method

  1. In a bowl whisk up you eggs until they are nice and fluffy the set to one side
  2. In a separate bowl add the egg yolks and sugar then whisk until all the sugar has dissolved. Once dissolved add the olive oil, yogurt, vanilla and whisk again. Then slowly incorporate the egg whites.
  3. In a bowl, add the flour, cocoa, baking powder salt and mix until all is well incorporated.
  4. Slowly incorporate the dry ingredients to the wet mix, whisky throughout.
  5. When all is well incorporated add the rough chopped chocolate, mint and rum.
  6. When your waffle iron is hot lightly spray both sides with oil and add one ladle (30mls) of your waffle mixture. Cook for 6-8 mins
  7. While the waffle cooking, in a pan melt 60g of dark chocolate with ½ cup of thick cream, until you achieved a silky texture.
  8. When the waffle is cooked, severe warm with the chocolate ganache, fresh mint, chocolate pieces and you choice of ice cream, yoghurt, or ricotta
